I'm going to share some food combinations that have been major winners for me lately. Some of them make sense, some of them don't, and some you will have to try and let me know what you think!
Watermelon, Vega One Protein Powder, Ice and Collagen- I just made this smoothie about 5 minutes ago and I sit here drinking it as I write this post. I came up with it after having watermelon leftover that was a bit past fresh, but I just couldn't toss it! This is where the blender comes in! I blended about 1 cup of watermelon, 1/2 scoop Vega One Protein powder, 1/4 cup ice and 1 scoop of collagen (I use Great Lakes Collagen). It was super refreshing!! I will be making it again and again this summer.
Ricotta, Roasted Zucchini, Arugula and Balsamic- You really could take any leftover roasted veggie and add some ricotta with it. Do a quick drizzle of balsamic or honey and add some fresh arugula and you have a quick meal!
Hard boiled eggs, horseradish sauce, Sweet Beet Kraut (Cleveland Kitchen)- This combo is delicious. I had some hard boiled eggs that I chopped up and added on top of a salad, did a quick drizzle of horseradish sauce (this is my weakness, nothing healthy about it! I just use it sparingly, a little goes a long way!) and a good hefty pinch of the sweet beet kraut. I am using this on everything, because the benefits of fermented foods is huge. Go get this combo and try it! It would be great to make as an egg-salad sandwich or wrap with the kraut on top!
Seedy granola, almond milk, frozen blueberries, cottage cheese- This is my go-to evening snack. I have my own recipe for seedy granola (I'll be posting soon!) that is barely sweet, but super toasty and nutty. It goes great with some sweet blueberries and salty cottage cheese. You get a good dose of protein to keep you satisfied, so it makes a good pre-bed snack.
Corn, edamame, soy sauce, sesame seed, honey- This is an easy combo that I made one night when I needed a vegetable with dinner. My kids love soy sauce and anything Asian flavored. I have made this super-quick just by microwaving the frozen corn and shelled edamame, then drizzling with some honey and soy, and sprinkling with sesame seeds and salt. However, I have also made a really great edamame salad with a few more ingredients. If you don't have the time or energy for a full recipe, sometimes just taking a few of the ingredients and simplifying it is enough!
La Croix Tangerine, Splash of OJ, Fresh Rosemary and Mint- I love taking any flavor of seltzer water and giving it a nice summer excitement by adding fresh herbs. I added plenty of ice to a large glass, added about a tablespoon of pure OJ, pinch of fresh rosemary and mint and then poured the Tangerine La Croix over top. It was delish! I think some other good combos would be Tart Cherry Juice with Cherry Bubly and Basil, Fresh Lime Juice with Key Lime La Croix and Fresh Mint or La Croix Limoncello with Blueberries and Fresh Rosemary.
