Mug Cake, my favorite
Why do I like a good mug cake? I think its because I don't typically like making cakes on the regular. Some of my friends love this, but it isn't something I have been really drawn to. Recently, I have worked with some of my clients on reducing overall added-sugar intake. When I ask them to do it, I also feel challenged to do the same. I started almost a year ago doing a "14-Day No-Added-Sugar Challenge." It was EYE-OPENING, even for me! It's amazing how much we rely on sugar, and how much it can control us.
The recommendation for daily intake of added sugars is 25gm or less per day. Why do they say "or less"? It's because added sugars do not typically have any nutrients or benefits to our body. Yes, they can bring us all the happy feels and help us celebrate life experiences, but we have to be careful to not let them control us. This is something that is easy for some, and very difficult for others. However, I have never had someone regret doing this challenge.
In the meantime, the recipe I have below is not void of added sugar. However, it is a great recipe for the transition back to consuming sugar, but in a safer way. Why? Well, its portioned for one serving and it doesn't leave us thinking about the sugar for days like a whole cake may. It allows us to indulge, but it also allows us to feel nourished as well. It is higher in protein than most cakes, and the collagen is a great benefit to providing protein and helping with all the tissue and muscle growth in our bodies. I hope you enjoy the recipe!
Cinnamon Roll Mug Cake with Collagen
Ingredients:
1/4 cup flour of choice
1 TSP ground flax
1 TBSP Maple Syrup
1 TBSP Collagen powder
2 TBSP egg whites
1 TBSP cottage cheese
1 TSP vanilla extract
1/2 TSP baking powder
Pinch Salt
For Icing:
2 TSP maple syrup
1 TBSP greek yogurt
1 pinch cinnamon
Cocoa Nibs, opt
Honey, optional to taste
Directions:
To a microwave-safe mug, add first nine ingredients and stir well until combined (use a fork for best results)
Microwave on high for 80-90 seconds or until you see the cake billowing above the top of the mug.
Remove carefully (its hot!)
In a small bowl, mix yogurt, syrup and cinnamon. Pour over cake. Sprinkle with cocoa nibs and a small drizzle of honey to taste.
